Leblebije i karfiol sa kari začinom / Roasted Curried Cauliflower and Chickpeas with grains

Mi obožavamo indijsku kuhinju, ne spremam je tako često, ali kad je spremim, jedemo je sa uživanjem.

Sastojci:

1 glavica karfiola
1 konzerva od 800 g leblebija
1 i po kašika kari začina koji vi koristite
nekoliko grančica majčine dušice / timijana
4 čena belog luka ( 2 čena iseći na krupnije komadiće a 2 čena na vrlo sitno )
2 ljute male papričice
200 g mešavina žitarica po izboru ( ječam kinoa, kuskus,orzo )
po 1 kašika sitno seckanog korijandera i peršuna
sok od pola limuna i nekoliko kolutova za garniš
nekoliko kašika ulja
so i biber
2 kašike tostiranih pinjola

Priprema:

Glavicu karfiola oprati i iskidati na manje cvetiće i osušiti kuhinjskim papirom.
Leblebije ocediti od tečnosti, isprati pod mlazom hladne vode i osušiti i njih kuhinjskim papirom.
U zdelu staviti cvetiće karfiola,leblebije, sitno iseckanu majčinu dušicu, kari začin, krupnije sečen beli luk,cele male papričice i malo soli,bibera i kašiku dve ulja.. Sve to zajedno izmešati i sipati u pleh i peći u prethodno zagrejanoj rerni na 200*C oko pola sata ili dok vam karfiol i leblebije lepo ne porumene. U pola pečenja promešati.


Dok se karfiol peče vi skuvajte mešavinu žitarica koje volite. Kod mene je bio izraelski kuskus sa kinoom. 
Staviti 375 ml vode sa kašičicom soli i pustiti da provri.Dodati žitarice, smanjiti temperaturu i kuvati oko dvadesetak minuta ili kraće, dok žitarice nisu skuvane. Ja sam stavila 180 g mešavinu ovog izraelskog kuskusa u kome ima, kinoa,orzo pasta, izraelski kuskus,bebi leblebije i dodala sam još 20 g crne kinoe, tako da sam dobila 200 g. Kad su žitarice upile svu vodu, rastresite viljuškom.
U dublju činiju staviti pečeni karfiol sa leblebijama, dodati kuvane žitarice, iseckani peršun i korijander, siitni seckanu ljutu papričicu, sitno iseckanog belog luka, sok od pola limuna,so i sveže samleven biber.Sve ovo dobro sjediniti, posuti sa blago prepečenim pinjolima i poslužiti toplo.

  Roasted Curried Cauliflower and Chickpeas with grains


My husband and I love spicy Indian food. When I found this recipe I just had to make it and right from the beginning I knew that we will love this dish.I added some more ingredients to satisfies our taste buds.






Ingredients:

1 head cauliflower broken in smaller florets
1 large can ( 796 g ) chickpeas
1 1/2 spoon curry spice ( your favorite )
2-3 sprigs of thyme
4 cloves of garlic ( 2 cloves chopped and 2 cloves finely minced )
2 small chilli peppers 
200 g grains of your choice ( quinoa, millet,Israeli couscous,orzo )
spoon of each; finely chopped parsley and coriander 
salt and freshly ground black pepper
juice of half  a lemon + lemon slices for garnish
2-3 spoon oil
2 spoons of a lightly toasted pine nuts

Directions:

Drain and rinse chickpeas.Pat dry them with kitchen paper towel.
Cauliflower wash and break in a smaller florets and pat dry it.

Put cauliflower and chickpeas in a bigger bowl add your favorite curry spice,thyme freshly ground black pepper,2 spoons of oil,one chilli pepper and pinch of salt.Toss it all together and pour on the baking sheet.

Bake in preheated oven on 200*C ( 400 F ) around 30 minutes or until cauliflower is tender and chickpeas crispy.Toss it half way trough.


While cauliflower and chickpeas are in the oven, cook on top of the stove your grains. I purchased bag of a Israeli couscous with everything in it ( dry baby garbanzo beans, orzo,quinoa ) and I also added 20 g of a black organic quinoa so i can have 200 g ( used couscous 180 g + 20 g of a black quinoa ).

In a smaller pot put 375ml water add 1 teaspoon of salt and bring to a boil,add your grains bring to boil again, lower the temperature on minimum and cook it for approximately 20 minutes or until grains are cooked.Stir it once or twice, otherwise grains can stick for the bottom of the pan.

In a big bowl put cooked grains,baked cauliflower and chickpeas,add lemon juice, garlic,chilli pepper ( if you do not like heat do not put chilli pepper ) parsley,coriander, salt and freshly ground black pepper.Toss it together,sprinkle with lightly toasted pine nuts.Garnish with lemon slices and serve it hot.
